2. Exclude the Sitemap files of the Rank Math plugin in your caching plugin. The cache could be via a plugin or from the server. For plugins or Cloudflare, please follow this article:

3. If the above steps don’t seem to work, kindly apply the following filter to your site.
add_filter( 'rank_math/sitemap/enable_caching', '__return_false');

The sitemap index should update right away when you publish or modified a post/page under the sub-sitemaps.
However, by checking your latest posts, it seems that there are no new posts after that date 7/29. Could you please confirm if you have published or modified any posts after that?

Yes, every time you update or modify your posts, the date in the sitemap index will be updated as well.
Please note that you’ll get the error if you inspect your sitemaps because, by default, sitemaps are set to noindex as they are meant to be crawled and not to be displayed on search results pages.

When the count of the Discovered URLs is zero or does not match your actual sitemap in your Google Search Console, it means Google didn’t use the sitemap to find the URLs.
Please note that each time Google uses a sitemap to find a URL, the count of the Discovered URLs increases by one.
It mostly happens when you have good internal linking or used the Instant Indexing plugin.
