Those widgets/blocks are only available using the block editor (Gutenberg) as you have mentioned. Those could not be added by using the Elementor builder:

The schema block displays the selected schema data automatically on your site upon using it on your site.

If you wanted to use the Elementor, you may need to use the builder options/elements to display the schema data.

Also, with Rank Math PRO, you can add multiple schema types on your pages in Elementor:
