For initial troubleshooting, please follow the steps to flush the sitemap cache:
1. Flush the Sitemap cache by following this video screencast:

2. Exclude the Sitemap files of the Rank Math plugin in your caching plugin. The cache could be via a plugin or from the server. For plugins or Cloudflare, please follow this article:

Hi! Clearing the cache helped me.
But this is not the first time this problem has appeared, and I don’t understand, will I now have to clear the sitemap cache like this every time?

If you’re using any caching plugin on your website then you can follow the second step shared by my colleague above to exclude the Sitemap files of the Rank Math in there so that you don’t have to face this issue again in the future.
Also, you can add the following filter on your website to disable the transients cache for sitemap:
add_filter( 'rank_math/sitemap/enable_caching', '__return_false');
