We’re unable to replicate the issue where the data is getting deleted for the schema recipe upon updating to the latest version.
For troubleshooting, you may verify if the data are deleted in your website’s database.
Please check the post id under the database table wp_postmeta. Once done, you should see a meta_key like this and check any entry that starts: rank_math_schema_
If you need to access your database directly from your web host, you can get in touch with them for assistance as well.
