After carrying out these checks, if everything seems fine, it’s still possible for Google to choose to show a different meta title/description for your search keyword based on the search intent.

Do I need to set the schema for each page through the page editor?
I was referring to the single page title/single page description where it shows the excerpt information. In the schema section, is shows the %seo_title% and %seo_description% but the single page settings do not. Do I need to manually assign every page to schema? I’m not sure how that works, as I am not our developer, but a content writer/SEO team member.

Do I need to set the schema for each page through the page editor?
This depends on which schema you are using. If you’re using the Article schema, then you won’t need to update it on the editor as it automatically fetches the necessary data from your content.
If you have entered a custom title or description while editing the page, then the variables in Titles & Meta settings will be overwritten.
To verify if you have correctly set the title and description, you may check the source code or use these free tools:

The results in that tool will show how Google and search engines will show those meta tags on the search results page.
If the title/description you have set is already appearing correctly with those tools, then please note that Google sometimes ignores the custom meta info altogether and shows something from the page’s content that matches the search intent better.
