Could you please clarify what “tracking” you are referring to? Is it for the Analytics module?
If that’s the case you can only have one domain being tracked and importing data from Google Search Console and to change the current one you need to head over to WordPress Dashboard > Rank Math > General Settings > Analytics and click the yellow “Reconnect” link to choose a different one.
Please note that the domain should always match the current domain of the website to get consistent results.
In case you are talking about something different please clarify so we can advise further.

Not the analytics, I have website use WordPress with the nama apple.com, but I migrating it and the WordPress who use rankmath change the tracking as wp.apple.com not apple.com. because we just use WordPress as a place to put the content. Could I change the wp.apple.com to apple.com, so I still use rankmath and rankmath can tracking our domain properly.

If I understood it clearly, are you using Headless CMS where you are using WordPress for the content and other features? If yes, you can use the Headless CMS support option by navigating to Rank Math > General Settings > Other and toggle ON the Headless CMS support option. Besides that, you also might need to change the canonical to point to the main domain instead of subdomain using this filter:
