Not only does it happen to me on pages with elementor, but it also happens to me on entries that do not use elementor. When I make any changes to the entries such as a change of text, or photo all the meta tags are deleted.
Anyway I will try the solution for elementor pages.
I have followed these steps and I wanted to comment that I already had it active.

For initial troubleshooting, please check if you are using a Firewall as it may prevent saving the changes. If you are using a Firewall, please whitelist this route:
