Please disregard the previous reply as the user is not from our support staff. Also, Rank Math’s sitemaps are dynamically created, which means that you won’t see any XML files in your website’s root directory to edit.
If you have already redirected the pages to 410 or deleted them, they should be automatically get removed from your sitemaps.
To make sure that’s happening on your site, please follow these steps for initial troubleshooting:
1. Ensure you’re using the latest version of your plugins/theme including the Rank Math plugin.
2. Flush the Sitemap cache by following this video screencast:

3. Exclude the Sitemap files of the Rank Math plugin in your caching plugin. The cache could be via a plugin or from the server:
https://rankmath.com/kb/exclude-sitemaps-from-caching/
If the issue still persists, please try adding this filter to your active theme’s functions.php file:
add_filter( 'rank_math/sitemap/enable_caching', '__return_false');
