I have no way to exclude pages or terms from sitemaps?

Circling back to your concern, please head over to your WordPress Dashboard > Rank Math > Sitemap Settings > General, on this page, you should be able to exclude posts, pages, and terms. See the screenshot below for reference:

However, in your screenshot, it seems you are still in “Easy” mode, please head over to your Rank Math > Dashboard, and on the top right, click on the “Advanced Mode” and go back to the sitemap settings to see all the options there or you may follow the guide my colleague previously shared.
