After checking it in detail, it is more about editing your product categories permalinks with a custom URL than using the Rank Math options.
Unfortunately, Rank Math doesn’t provide a feature like that since it is not specifically focused on SEO. Luckily it should be possible to edit the product category permalink to just use the child category slug but it should be done with a plugin focused on advanced permalinks.
There are a lot of editing permalinks’ plugins offered in WordPress, for example, you could check this one: https://wordpress.org/plugins/permalink-manager/
