Is worth mentioning that I have the latest version installed, not sure if it is related to the latest update, perhaps shpould I downgrade? It is safe to downgrade?

We always recommend using the latest version of your plugins and theme to avoid issues and security vulnerabilities. However, you can downgrade/rollback to the previous version of Rank Math by following our guide here for testing purposes:

If the issue still persists with the previous version/s, then please check if you are using a Firewall as it may prevent saving the changes.
