Yes, you’re correct about the grey URL in the field as Rank Math adds the canonical automatically.
However, the product category page is set to noindex
, that’s why the canonical is not visible in the page’s source code.
Upon further investigating your site, this option is checked that’s why your whole site is set to noindex

If you have not intentionally checked it, you need to disable that option to set your whole site to index. Once done, the canonical URL should be also shown in your page’s source code.
