Unfortunately, this behavior could not be achieved automatically in Rank Math as you may need to set redirections to those deleted products manually.
Rank Math can only set a fallback behavior for your 404 URLs on your WordPress dashboard > Rank math > General Settings > Redirections > Fallback behavior:
https://rankmath.com/kb/general-settings/#fallback-behaviour
However, this applies to all of your URLs and not your deleted products only.
