Can you please try checking if PHP values are not too low to handle the processes?
You can check that by going to WordPress dashboard > Tools > Site Health > Info tab > Server
If the values are low, please contact your web host and ask them to set the following values:
PHP Memory Limit: 512M
Max input time: 150
PHP time limit: 120
PHP max input variables: 1000
Once done, clear your website cache and check the sitemap.
If the issue persists, we might need to take a closer look at the settings. Please edit the first post on this ticket and include your WordPress & FTP logins in the designated Sensitive Data section.
Please do take a complete backup of your website before sharing the information with us.

We cleared our browser cache and we tried accessing from Chrome Incognito and Firefox Private Windows, but it is still the same.

We are able to access your website admin but we are also greeted with a 500 server error on the dashboard page.

I tried manually disabling the Rank Math plugin by accessing the Cpanel you shared but the 500 error is still there. So the issue seems to be outside of Rank Math. Can you please verify this on your end? You can consult your hosting provider as this may be an issue with other plugins or a misconfiguration in the server.
After you resolve that, let us know here so we can debug the sitemap further.
