That didn’t work, still having the same problem. I get to the point where it’s supposed to automatically connect and my site isn’t showing up.

You can skip the Google connection process in the Setup Wizard and after completing the setup please try to follow the steps below and see if that works for you.
1. Make sure that you have verified your website on Google Search Console, if not, follow this guide: https://rankmath.com/kb/google-site-verification/
2. Please make sure that you are not connecting to Google Search Console via a domain property but rather a URL prefix and that you have verified the correct version of your website on the Google Search Console (HTTP or HTTPS, www or non-www).
3. Please remove RankMath’s app from your Google apps permissions: https://myaccount.google.com/permissions
4. Once done, reconnect the Google account again from WordPress Dashboard > Rank Math > General Settings > Analytics and configure the Search Console and Analytics settings again.

I was able to get it verified in with Search Console but my sitemap has a “1 error” status. When clicking it I get “Sitemap can be read, but has errors” “Your Sitemap appears to be an HTML page. Please use a supported sitemap format instead.”, do you know how I fix this?

Meanwhile, follow the steps in this link to flush your sitemap cache:
1. Flush the Sitemap cache by following this video screencast:

2. Exclude the Sitemap files of the Rank Math plugin in your caching plugin. The cache could be via a plugin or from the server. For plugins or Cloudflare, please follow this article:

3. Disable the transient cache for the sitemap by applying this filter. This will make sure that your XML sitemap always reflects the latest changes on your site:
