The stage environment site map URL: https://plygemstg.wpengine.com/sitemap_index.xml
For pages, there are two sitemap URLs(duplicate). Before installing the rank math plugin, we deactivated and deleted the Yoast plugin and did not import anything from the previous Seo plugin (The rank math plugin setup on skipping steps).

Your page sitemap is not duplicated, but rather split into two parts (/page-sitemap1.xml and /page-sitemap2.xml).
Rank Math automatically creates another sub-sitemap for your posts and pages if the count already exceeds the limit. This happens due to the Links per sitemap option we have in Rank Math > Sitemap Settings > General
Please note that Google crawls small-sized sitemaps faster. With this in mind, Rank math uses the links per sitemap limit to break down sitemaps into smaller parts. You can also check Google’s guidelines for sitemaps:

Thank you. The issue is solved.
But for pages, the second indexed URL(https://plygemstg.wpengine.com/page-sitemap1.xml) is still showing page URLs.

It seems that you have increased the links per sitemap as you only have 1-page sitemap:
https://plygemstg.wpengine.com/page-sitemap.xml
For that change, you may need to resubmit your main sitemap to your Google Search Console account:
https://rankmath.com/kb/submit-sitemap-to-google/
