You can manage your sitemap and exclude/include post types on your WordPress dashboard > Rank Math > Sitemap Settings:

Also, Rank Math’s sitemaps are generated virtually, so all the changes you make should be reflected in real-time.
If there’s a sitemap/sub-sitemap still appearing even after removing from that option, then your sitemaps must have been heavily cached.
To refresh the sitemaps, please follow the steps in this link to flush the sitemap cache:
1. Flush the Sitemap cache by following this video screencast:

2. Exclude the Sitemap files of the Rank Math plugin in your caching plugin. The cache could be via a plugin or from the server. For plugins or Cloudflare, please follow this article: https://rankmath.com/kb/exclude-sitemaps-from-caching/
