First, let’s explain why Search Console is showing 0 pages discovered for your sitemap. This does not mean that Google is ignoring your sitemap or that your pages are not being indexed. It simply means that Google has already found your pages from another source, such as a link from another site or a social media post.
Your sitemap is just one of the ways that Google can discover your pages, but it is not the only one. As long as your pages are being indexed, you don’t need to worry about how they are discovered. Second, the “no-referring sitemap detected” means the page has been discovered by Google, and Google knows about it.
Please, note that a sitemap is only one of many ways Google discovers the URLs of your site. If Google discovers the URL through other means, it may not cross-reference your sitemap to check if the URL is there.
Third, since your articles are indexed on Google, the pages are set correctly for indexing, and there is some other issue preventing them from being indexed on Bing.

I just have one doubt: why have my posts (written months ago) not been crawled yet? Only the posts I submitted via the URL inspection tool are getting crawled and indexed.

This indicates that Google has not discovered this URL before and has not been crawled yet. Depending on your Google crawl budget, Google might have not crawled your site yet which could explain why Google is reporting the URL as “Unknown to Google”.
Also, if there are any issues reported on your URLs that prevent them from being indexed or affect your rankings, then you should see them in the coverage section report of your GSC:
