So it looks like Google hasn’t completely seen or honored the changes you made.
Please note that it is a pretty common thing with Google these days. It happens with 70% of the results that even if everything’s fine, Google decides to show a different meta information for your search keyword, there is nothing you can do as Google sometimes ignores the custom meta info altogether and show something from the page’s content that matches the search intent better.

As for the analytics question, the Google connection is not properly established so you should need to connect your Google account again and make sure you check all the permissions required.
First, please verify using the URL prefix and ensure that you have verified the correct version of your website on the Google Search Console (HTTP or HTTPS, www or non-www). You can reconnect it on your WordPress dashboard > Rank Math > General Settings > Analytics.
After that, try reconnecting your Google account. Remove RankMath’s app from your Google apps permissions: https://myaccount.google.com/permissions
Then, head over to your WordPress Dashboard > Rank Math > General Settings > Analytics and reconnect the Google service and this time, ensure that all permissions are checked:
