I don’t believe the Author schema is showing incorrect data. I believe by default when there is one author, the author’s name at the top of each post will link to the homepage. I’d like it to link to my About page. How do I go about doing that?

I’ve checked some of your posts, and the author name is already opening the /about/ page of your site. Please refer to the screencast in the sensitive data section.
Could you please confirm if there’s a specific URL that is not doing the same thing or if we have missed some steps to replicate the issue?
However, if you wanted to update the author URL in the article schema, you can use the filter in the sensitive data section.
