The screenshots you have shared are not accessible. However, I can check that the product categories are already set to Index on your site:

It seems like Google hasn’t crawled the pages after setting them to Index and that’s why they are still reporting the excluded by Noindex status.
Also, some of the categories that have no products assigned to them are set to Noindex as our plugin has an option to set empty categories to Noindex. If you want the empty categories to be indexed, please navigate to WP Dashboard > Rank Math SEO > Titles & Meta > Global Meta and disable the Noindex Empty Category and Tag Archives option.
Once done, please validate the fix in your GSC account and wait for Google to crawl the URLs again.
The issue should be resolved after that. Let us know if it doesn’t.
