I’ve checked your sitemap index, and the product category is not included. However, those pages are already set to index, so they should be included in the sitemap.
For initial troubleshooting, ensure that the product categories are already included on your WordPress dashboard > Rank Math > Sitemap Settings > Product Categories:

Then, please follow the steps below to ensure that your sitemaps are not getting cached (if not yet):
1. Flush the Sitemap cache by following this video screencast:

2. Exclude the Sitemap files of the Rank Math plugin in your caching plugin. The cache could be via a plugin or from the server. For plugins or Cloudflare, please follow this article:
