We have already seen the issue with the latest version of Rank Math about the Google account connection.
However, our developers are looking into it and will soon release a fix for this. This issue is occurring for many of our users and we expect this to be fixed fairly soon as it’s a high priority.
In the meantime, you can roll back to the previous version of Rank Math in order to avoid this issue. Please navigate to WordPress Dashboard > Rank Math > Status & Tools > Version Control > Rollback Version, select and Install Version 1.0.116

Thank you for contacting us and sorry for any inconvenience that might have been caused due to that.
Please make sure that you’ve connected the correct Google account and not connecting to Google Search Console via a domain property but rather a URL prefix and that you have verified the correct version of your website on the Google Search Console (HTTP or HTTPS, www or non-www).
After that, please try reconnecting your Google Account again from WordPress Dashboard > Rank Math > General Settings > Analytics, and don’t forget to check all the necessary permission.

If the settings are not getting saved properly, please try saving the settings for the Analytics with a different browser such as Google Chrome. If you’re already using Chrome, then you can try it in Incognito mode just to save the settings.

I tried the rollback. It didn’t work. I will switch back to Yoast. I found this very frustrating. I was really looking forward to using Rankmath and would’ve signed up for Pro

We have good news for you. The analytic issue was a minor glitch that happened in the last update of our plugin, but we have already fixed it in the latest version of Rank Math.
