As an initial troubleshooting, please try following the steps below:

1. Flush the Sitemap cache by following this video screencast:

2. Exclude the Sitemap files of the Rank Math plugin in your caching plugin. The cache could be via a plugin or from the server. For plugins or Cloudflare, please follow this article:

3. Add the filter code to your theme’s functions.php file:

add_filter( 'rank_math/sitemap/enable_caching', '__return_false');

You may also follow this guide on applying filters to your website.

This shouldn’t be an issue since the initial sitemap URL (/sitemap.xml) is removed from the index whenever the links per sitemap reach the limit (200 by default) and replaced by /sitemap1.xml.

Also, you may need to submit your sitemap index only and remove your sub-sitemaps in Google Search Console. Google will use it then to find and crawl the other sitemaps.
