Gutenberg full site editor is meant to create templates for the website including header / footer / content area and common elements. It doesn’t has any actual content but template parts that are used in actual pages / posts. Whatever template you create here, the post / pages will inherit that template design. As we already have the Rank Math snippets editor in posts / pages / custom post types, there’s isn’t any option to enable Rank Math in Full site editor.

too bad I wanted to activate a product schema on all the pages of a taxonomy in addition to the article schema already present

With Rank Math PRO, you can add a schema template to apply on all of your pages easily:

However, in the Rank Math free version, you can use and customize this filter to extend the schema of all your pages:
https://rankmath.com/kb/filters-hooks-api-developer/#extend-json-ld-data
