The image you show us in the screenshot is used when you are adding a product in a post, page, or custom post type.
In your case, since you are already in a Product (Woocommerce), the plugin detects it and configure all the Product Schema automatically using the information you add in the Woocommerce fields and in the other Rank Math settings; so you are not doing anything wrong.
