I’ve checked some of the links from your sitemap, and it seems that the image count is correct based on the image in the content. Please see the screencast in the Sensitive Data section. Could you please also share some affected URLs where the images are not being shown in the sitemap?

thank you for your extremly fast respond.
You are right (for the posts) but not for the pages, which are differently built.
Take a look at the frontpage for example. There are a few more images but the sitemap just counts 1 image: the featured image.
Do you know what I mean? š

You had said you are using ACF custom field; would you please confirm if you are adding the images through the ACF fields?
If so, we have an option to include the images from ACF fields in sitemap but this is currently available for Pro users only:

we just bought RankMath Pro and it still didn’t work perfectly.
Is it possible that RankMath is not able to handle ACF fleixible content fields?

It is completely secure and only our support staff has access to that section. If you want, you can use the below plugin to generate a temporary login URL to your website and share that with us instead:
